The Ultimate Breakfast Bar

This is easy to make and eat! Loaded with figs my absolute favourite which contain minerals and antioxidant vitamins A,E and K. Keep them in the fridge they will last all week and be ready for you to grab and go! 


200g Dried Figs chopped into 1 cm slithers or use cranberries or raisins
200g Rolled Oats
100g Pumpkin Seeds
100g Sunflower Seeds
50g Sesame Seeds
120g Runny Honey
120g Tahini or almond butter
3 tbsp Coconut Oil
1 tbsp freshly grated Ginger
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
Pinch of Salt

Put the oats, sunflower, sesame and pumpkin seeds in a large pan on a medium heat and cook, stirring, until they have turned golden. Tip onto a plate to cool. Put the honey, tahini or almond butter, oil, vanilla, cinnamon, salt and ginger in a pan (use the same pan again) on a gentle heat and cook, stirring, until mixed.

Tip the cooled oats and seed mix and dried figs into a mixing bowl. Pour over the honey and spices and massage well with your hands so that everything is combined and coated. Line a 20cmx30cm baking tin with baking paper and spoon in the mixture, smoothing it with the back of a spoon. Cover with cling film and put in the freezer for 1 hour to firm up. Once set, slice into bars and store in a sealed container in the fridge for a week if they last that long!
